Committed to supporting local communities, our celebrated chefs utilise the island’s natural resources to showcase the finest Dominican and international dishes. Using a “farm to table” and “sea to table” approach, you can be certain everything is locally sourced and cooked fresh. There are four restaurants and bars to explore during your stay.

Cabrits Market specialises in Creole gastronomy, Bonsai offers exciting Pan Asian cuisine, Kweyol Beach Café serves international favourites and refreshing drinks with a sea view and Rumfire Bar – offers a large selection of “Barmacy” medicinal mixtures of Dominican Rum and local herbs and fruits while you enjoy the view from our firepit.

Having spent his youth on his family farm, executive chef Senthil keenly understands the true meaning of “farm-to-table.”

Staying true to his roots, the chef is committed to serving only the freshest produce and ingredients to his guests. He and his culinary team have planted their own tropical garden of pineapples, lettuce, chili, thyme, and rosemary, which guests may visit. Small nearby farms supply the resort with free-range poultry that is raised amongst Dominica’s vast green fields and fresh mountain air.

Local fishermen bring line-caught fish straight to the resort jetty. Guests can hand-select their seafood for dinner and have the resort team prepare it according to their exact preferences for a true “sea-to-table” dining experience.

Extending the resort’s sustainability initiatives into the kitchen, food waste and the use of plastics have been minimised to a bare minimum, and all dishes, including those at buffet stations, will be prepared a la minute. A specialised machine crushes any remaining materials for use in the garden, bringing the chef’s vision full circle.

Cabrits Market is the resort’s signature restaurant, providing an ambience of vibrant colours and flavours that are indicative of a traditional Creole market. Each morning the aroma of freshly baked croissants fills the air as the open kitchen lets you intimately partake in the preparation experience.

Immerse yourself in fresh, local ingredients as our talented chefs bring the sea-to-table and farm-to-table concepts alive through the interactive buffet and a wide spread of delectable fare. Prepare to indulge in an opulent brunch or savour in the delightful variations of a Creole-themed dinner.
